Summertime, and the living is easy


First, the socks I finished at the beach today - and gave to my neighbour for her 2 year old daughter this evening.

And home for a late supper with flapjacks for dessert. As my Canadian friends thought that flapjacks were pancakes, I thought I'd put the recipe here for these simple treats that youngest son loves to make.

FLAPJACKS (recipe adapted from Rose Elliot's Cheap and Easy cookbook)

three quarters of a cup of sugar
three quarters of a cup of margarine or butter
one eighth of a cup of liquid sweetener (maple syrup or agave)
4 cups rolled oats

Melt the first three ingredients over low heat in a saucepan. When combined, add the oats, mix until they are all coated, pour into a 9 X 13 pan (you might want to line it with baking parchment). Flatten out (we use a potato masher) and bake for 20 minutes at 375 degrees (190 Celsius). Cut into pieces while still warm, leave to cool. Eat!

L and I were talking on the way home and it really is our favourite beach (hint, hint for next year ;o) It's not crowded, there is lots for all the kids to do and well, the bathrooms are much nicer!! It is definitely worth the extra driving to get there - plus there is a very nice yarn store on the way :)
